Announcing the arrival of our new Executive Chef, Juette Shallow

Great news for Hitchin Priory and Hitchin foodies!

Juette Shallow has arrived as our new Executive Chef. Hailing from Coq D’Argent and being instrumental in the relaunch of Quaglino, his extensive culinary experiences at high-end and high-volume restaurants will further enhance our already excellent food and beverage offering. He’ll be bringing innovative food trends to the table.

Perched on the outskirts of the town, the food served at The Delme is a far cry from the typical restaurants you’ll find down the high street.

Courtesy of the Hitchin Priory’s highly experienced new Executive Chef, Juette Shallow, and his well-honed kitchen team, the restaurant’s modern and plated cooking really comes into its own with an A la carte menu, which offers authentic dishes.  Diners are truly spoilt for choice with a host of notable, well-executed dishes, which are eye-catching and deliciously flavoursome.

Highlights from the starters include ham hock terrine, celeriac soup and smoke salmon.

The Delme’s exemplary list of mains includes such delicious dishes as slow cooked lamb shank, whole lemon sole, stuffed round courgette and chicken breast in a mushroom cream sauce.

Amongst the contemporary home-made desserts are whiskey and pecan tart, white chocolate cheesecake and lemongrass Crème Brûlée.

An array of quality wines and other drinks are served from the bar area.
